Egg Bhurji / Masala Scrambled egg

Egg Bhurji is a great twist to the old scrambled egg. This dish is one of the pretty common dishes in north part of India. This is very versatile dish that can be served in different ways and with different things or by itself. See the list below for various ways of serving.
Ingredients:
·         Eggs – 7 medium size
·         Onion – 2 medium sized
·         Tomato – 2 medium sized
·         Green chili – 2, finely chopped
·         Garlic – 5 cloves, finely chopped
·         Ginger – 1 tbsp. grated
·         Red Chili powder – 2 tsp.
·         Turmeric powder – ½ tsp.
·         Garam Masala – ½ tsp.
·         Grated coconut/ dry unsweetened coconut – 2 tbsp. (optional)
·         Coriander / Cilantro leaves – 1 tbsp. to garnish
·         Oil – 2 tbsp. Salt to taste


 

  
Method of Preparation:
~ Add some oil to the cooking pan and fry cut onions. Add green chilies, ginger and garlic. Fry till onions become transparent.
~ Now add turmeric and chili powder to the mixture, continue to fry for some time and add finely cut tomatoes.
~ Once tomatoes are almost done (about 2 mins.), make space in the middle of the pan and add the eggs. [You can break them before hand in a separate container if worried about adding pieces of shell. But there is no need to beat the egg mixture.]


 


~ Add salt and gently mix, pulling, lifting and folding eggs – until eggs are almost done.
~ Add grated coconut, garam masala and coriander leaves. Give it a mix and remove the pan from heat, since if you continue to leave it on it will firm up the eggs too much.
~ Serve it hot with chapatti or tortilla.

Serves: About 5 to 6 people
Preparation Time: About 10 to 15 minutes

Various Ways of Serving:
·     Tortilla/ chapati rolls – Best for kid’s lunch sack. Place two spoonful of bhurji on the tortilla/ chapati. Top it with some ketchup. Roll it up and cut into half.

Sandwich – This one is my son’s favorite lunch. Take two whole grain bread slices. Butter one side of the bread and place that side on sandwich maker. Place a slice of American cheese, top it with bhurji, and place the other bread piece on top. Make sandwich as per instruction (usually they take about 2 to 3 minutes). Serve the triangular wedged sandwiches with ketchup or green chutney.
Bhurji Paav – Paav is kind of burger buns. You can use burger buns for this. Gently separate the halves of the bun ¾ (Do not take them apart). Lightly butter and heat up the inside portion of the bun. Apply some green chutney, place small lettuce leaf, tomato and top with bhurji. Close it with other side of the bun.
