Double Chocolate Brownie

Happy birthday to my sweet little nephew. I got to celebrate his 2nd birthday this weekend with him. And I am meeting him in person for the first time. Chocolate flavor is his favorite. So double chocolate brownies to celebrate the occasion. 


These brownies are as healthy as it can get. There isn't any butter in it and made with multi-grain flour. There no compromise on the taste though. My kids love this. Kids will never know the difference. :o) I have made this several times now. Every time it's been a hit with kids and adults.  



Prep Time: 15 min | Baking Time : 1 Hr. | Makes : 11X8 or 9X9



Ingredients:

Wheat Flour - 1 and 1/4 Cups
Cocoa Powder - 1/2 Cup
Baking Powder - 1 tsp.
Salt - 1/2 tsp.
Sugar - 1 Cup
Olive Oil (light) - 1/2 Cup
Egg - 1 *
Vanilla Extract - 1 tsp.
Milk - 3/4 Cup
Chocolate Chip (dark/ white) - 3/4 Cup

* You can replace egg with 1 tbsp. of flax-seed flour soaked in 2 tbsp. of water.




Method of Preparation:

~ Spray the sides of a 11X8 square glass pan. Preheat the oven to 325 deg.
~ Mix all the dry ingredients; wheat flour, cocoa powder, baking powder and salt in a small bowl.
~ Cream the sugar and olive oil together in a large bowl. 

~ Add egg/ flaxseed flour, vanilla extract and mix them well.
Add dry ingredients and milk in batches. End with dry ingredient.
Fold in chocolate chips, put it in glass pan, spread it gently. Bake for an hour or until the toothpick comes out clean.
~ Let it cool for few minutes and then take out on a wire rack to cool. 
~ Cut it into square and store in a cool place. It becomes really soft and moist when you leave it out for an hour to cool.
