Baked Vegetables

These baked vegetables are super easy to prepare. We love it as a side dish. Simple versatile recipe. You can pop in all or any of your favorite vegetables and have all the goodness together. Here goes the recipe.

Prep Time : 10 min| Baking Time: 35 to 40 min.



Ingredients:
~ Vegetables cut up in chunks.
(I used 1 - yellow squash, 1 - Bell Pepper, 1 - sweet potato, 1 cup brocolli florets, 10 to 20 asperagus.)
~ Lemon zest - of half a lemon
~ Lemon juice - From half of lemon
~ Salt - 1/2 tsp.
~ Pepper
~ Basil/ Parsley - 1 tsp.
~ Olive oil - 2 tsp.


Method of Preparation:
~ Preheat the oven to 375 deg Farenheit.
~ Mix salt, pepper, lemon juice and lemon zest. Add it in the vegetables and toss them well. Lastly add olive oil.
~ Bake for 30 to 40 mins.


Note: I sometimes use vegetables as a bed for chicken breasts to make it a full meal.
