Couscous with Soy Granules

Hello everyone!! After all the Diwali festivities, it’s once again time for blog hopping. This week I am paired with Shafa of Schmetterling Words. The name of the blog itself intrigued me. I looked for the meaning of her blog. Schmetterling means butterfly in German. Thanks to Radhika’s blog hopping I hopped on to her blog for the first time. I first thought of baking something from her blog, but then I stuck to my first choice of dish made of Couscous. I changed it up to use soy granules instead of minced meat. This dish was very flavorful and got great reviews from friends at the potluck party. So here I present to you Couscous with Soy, with a great Joy. J

Serves: 4 | Prep Time: 15 min. | Cooking Time: 15 min.


Ingredients:
  • Soya Granules – 1 cup
  • Couscous – 1 cup (About 250gm.)
  • Butter - 2 tbsp.
  • Onion – 1 large, sliced in thin strips.
  • Garlic – 4, minced.
  • Coriander Powder – 1 tsp.
  • Turmeric – a pinch
  • Red Chili Powder - 1 tsp.
  • Cumin Seeds – 1 tsp.
  • Coriander/ Cilantro leaves – a handful, chopped
  • Mint Leaves – a handful, chopped
  • Roasted Pistachios – chopped coarsely
  • Lemon Juice – 1½ tbsp.
  • Olive oil – 1 tbsp.
  • Salt – to taste


Method of Preparation:

~ First prepare Couscous – Place couscous in a large microwavable bowl. Add salt to taste and butter. Gently mix. Add water to just cover the couscous. Microwave high for 4 minutes. Let it stand for few minutes, take it out and gently fluff with fork and set aside.



~ Now prepare the soy granules – Place 3 cups of water in a microwavable bowl. Add salt and microwave high for 2 minutes. Be careful when you take the boiling water out, now put the soy granules in it and leave it for about 10 minutes. Squeeze out all the water thoroughly and set aside.


~ Heat the oil in a large pan over medium heat. Add cumin seeds and fry for few seconds.
~ Add onions and sauté till onion is translucent.
~ Add minced garlic, turmeric, coriander powder, chili powder and salt.
~ Add prepared soy granules and fry for few minutes. (about 3 min.)
~ Add lemon juice and mint leaves.
~ Reduce the heat to low, add couscous and mix everything thoroughly. Adjust the salt if required.
~ Serve it hot garnished with roasted pistachios and coriander leaves.

  19. Hey Sumee, this is a fabulous idea for Couscous. Soya granules is an apt replacement for minced meat. Am glad you liked it. :)
